Nectarine cake with pecans

Ingredients
Cake
Corn grits
70g
Spelt flour
130g (wholemeal)
Coconut oil
4 tbsp.
Sweetener
equivalent to 20g of sugar (stevia, erythritol...)
Salt
1/4 tsp.
Water
2- 3 tbsp.
Filling
Curd cheese
500g
Nectarine
5 pieces
Egg
2 pieces
Pudding
20g (powder- Vanilla)
Sweetener
according to taste
Sprinkle
Pecan nuts
60g (Walnuts)
Cane sugar
10g (coconut sugar)
Preparation process
  1. Mix the corn grits with flour, sweetener, and salt.
  2. Add coconut oil (butter) and make a crumble.
  3. Gradually add cold water to make a dough.
  4. Squeeze the dough on the bottom of the cake form and put in the fridge for 20 minutes.
  5. Bake at 200 °C for 15 minutes.
  6. Cut nectarines into half moons and mix with lemon zest.
  7. Crush the nuts.
  8. Mix curd with pudding powder, sweeten and add eggs.
  9. Spread the curd filling onto the body and spread the nectarines onto the surface.
  10. Finally, sprinkle with nuts and sugar.
  11. Bake at 200 °C for 25 minutes and let the cake cool before serving.
