Potatoes
600g
Olive oil

Cheese
80g (Chedar)
Egg

Red beans

Red pepper

Preparation process

Homemade Hashbrowns (also possible to buy frozen)

  1. Shred potatoes into a large bowl filled with cold water.
  2. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch.
  3. Drain potatoes well, pat dry with paper towels and squeeze out any excess moisture.
  4. Transfer to a bowl, add olive oil and mix
  5. Spread potatoes on the baking sheet and bake for about 20 minutes at 200 ° C
  6. Let potatoes cool down and divide by fingers

    * Tip: Bake the given amount of potatoes at least twice so that there is not too thick layer on the baking sheet
  1.  Grate Cheddar cheese and add "Hash browns"
  2. Erase the muffin cases and use fingers to shape the "nests"
  3. Cut the pepper,  drain and rinse corn and beans
  4. Crack eggs, add salt and pepper and whisk together
  5. Fill the nests with a mixture of corns, beans, peppers and pour the egg mixture
  6. Bake for approximately 20 minutes at 180 °C
